Ted Dennard first got interested in honey when he met an old beekeeper out in the boondocks south of Savannah named Roy Hightower details.

Ted starting learning the mysteries of the trade, and the young man was hooked. "Once you get into bees you find out how amazing they are," he says in his soft Georgia accent. "The wonder of them."

The wonder never left. Honey has been a major part of his life ever since. He kept bees in high school. He kept bees at the University of the South in Sewanee, Tenessee. He has traveled the world to see bees making medicinal manuka honey in New Zealand, rubber honey in Vietnam, logwood honey in Jamaica, heather honey in Ireland, and the famous tilleul lavendar honey of France.

Now, more than two decades after Old Roy passed on to that flower field in the sky, he finds myself, like Roy, rattling around in an old truck filled with bees. He spends most of his time in his honey workshop, but when he tends the beehives in deep forested river basins and lush mountain valleys, he thinks of Roy. Tasting a variety of honeys teaches you not only the uniqueness of each honey but also which honey type you love the most. Each honey is pure and delicious. The nectars of the specific flowers determines the color, sugar profile, and taste of the honey varieties

TUPELO HONEY: Savannah Bee's Tupelo Honey is the Queen of the honey world and the "gold Standard" by which all others are measured. Harvested during the last week of April, Tupelo nectars is one of the rarest and most valuable honeys in the world. The Tupelo flower's nectar is transformed by worker bees into a buttery delicacy whose subtle flavor and vanishing sweetness is almost impossible to describe. Try it in tea!

ORANGE BLOSSOM HONEY: Orange Blossom honey is an explosion of citrus on the palate with a very blossomy taste. A candy sweet honey that is best for lemonades, vinaigrettes, dressings and pancakes.

BLACK SAGE HONEY: Black Sage Honey is an extremely rare honey. It's light in color, subtle in flavor and never crystallizes in the bottle. The high fructose sugars make it great for fine teas and coffees.
